Spend a little bit of your Saturdays with the Plain Jane gals of
Possum Creek Herb Farm. We will gather around the kitchen table, in
the greenhouses and in the garden to learn about what makes herbs so
special and important in our lives. Class max is 12 with a
minimum of six participants for the class to be held. Fewer
than six participants will cause the class to be cancelled.
Classes must be paid for in advance. You may pre-pay for your class
by calling the farm, mailing a check or paying for your class
online. Refunds will gladly be given if notice is given three days
prior to class. Or you may have us hold your class payment and use
it for another class. If a class is extremely popular and fills up
quickly, another session may be an option. Class participants must
be able to climb stairs and walk to the garden/greenhouses. 10%

Getting Dirty in the Garden Sat.,
March 6, 2010. Time: 10:00-12:00 (all times eastern). Planning for
the spring herb gardens begins early here at Possum Creek. Bring
pictures, sketches and your imagination and let’s get that garden
growing. Class time will be utilized in the greenhouse to discuss
soil, cuttings and seed starting. We will talk extensively about
annual and perennial herbs and how they grow here in the south.
Handouts, plants and seeds will go home with everyone. Dress for the

Keeping the Farm Family Healthy -
Part I Sat. April 3, 2010. Time: 10:00-12:00. Learn some of
Possum Creek’s favorite fixes to bumps, bruises, the sniffles and
keeping those pesky bugs from biting. We will discuss some of our
favorite medicinal herb plants found right outside our own backdoors

Keeping the Farm Family Healthy-Part II
Sat. May 1nd. Time 10:00-12:00. Expanding upon what we
learned in the prior class we will create our own boo boo balm,
antiviral tinctures and insect repellent using all natural
ingredients and herbs. Participants will go home with a balm, buzz
off spray and the beginnings of their tinctures. Class Fee: $35.00 ADD TO CART
Feeding the Hungry Farm Sat. June
5,
2010. Time: 10:00-12:00. We will spend some of our class time
discussing the importance of eating fresh and local. We will also
spend time creating some of our favorite culinary applications of
herbs. Snacks and recipes will be included. Class Fee: $35.00 ADD TO CART

Harvesting the Herb Garden Sat. Aug.
7,
2010. Time: 10:00-12:00. We will discuss how best to harvest, dry
and store herbs at their peak of flavor and usefulness. We will make
a basil pesto and an herbal vinegar with our bounty from the garden.

Cheesemaking 101 Sat. Sept. 4, 2010.
Time 10:00-12:00. We will create and sample some of our favorite
soft cheeses in the farmhouse kitchen. Class fee includes a copy of Ricki Carroll’s famous book Home Cheese Making. Everyone will
go home with samples of their favorite soft cheese and recipes to

Gifts from the Garden Sat. Oct. 2, 2010.
Time: 10:00-12:00. We will create some of our favorite gifts, such
as bath brews, potpourri and teas, from the herb garden. Class Fee:
